La colomba di Papum

Some days ago, I joined Elra and Natalia in their decision to make Colomba, and soon we had some other baking mates joining us: Lien, Rosa and Zorra.
We decided to post all our adventures today, and here I am with mine, after a very busy week-end making colomba with other friends too on Cookaforum.
I announced also the Happy Baking Easter event, inviting everybody making colomba to pass by and leave their recipe and picture, it will be great fun!


Colomba is a typical Italian dessert cake made only at Easter time. We could say it's the cousin of Pandoro and Panettone. It is made mostly of butter, eggs, sugar and flour, and the best are made with sourdough. Flavoured with candied oranges, it is fashioned in a dove shape, glazed and topped with almonds and sugar granes, its texture is similar to Panettone.
Preparation is quite long and it takes a long time kneading to have an airy, soft and delicious dough then, but all your work will be nicely satisfied once you will eat it!
This year I tried Papum's recipe, very good indeed, but I was a little bit distracted and colored them too much!




You should need to prepare sourdough very active for this work and Papum suggests to refresh in this way:

Day before kneading:

100g. sourdough
200g. strong flour*
90g. water (30% of total flour weight)


If your sourdough is not so active and feel sad, you can "wrap" it for the night (after refresh) in this way: put it in a resistant cloth (like upholstery) with flour, wrap it tight with a synthetic tape (not a twine, it might break), put the packet in a small pan (it has to stay tight), cover with lid and keep at room temperture. Next morning it will be so hard you will have to cut the tape with cissors. use only the sourdough in the centeer for next refresh. This forced wrapping will give strenght to the sourdough.

Next morning (and in the evening first colomba's dough)

100g. sourdough (from the middle of the packet)
150g. strong flour*
75g. water

Leave to rise covered in a bowl for 3 1/2/4 hours, making sure it has doubled.

Then knead another refresh:

100g. sourdough
100g. strong flour*
60g. water

Leave to rise 3 1/2/4 hours and then start first colomba's knead.

All risings at room temperature.
* strong flour = 30% manitoba + 70% plain flour

First dough - in the evening

135 gr sourdough
390 gr manitoba, strong flour
155 gr very soft butter
105 gr sugar
3 yolks
150 gr water
50 gr extra water
Melt sugar in 150gr. water.


Knead sourdough with yolks for 5 minutes, then add sugar syrup little by little, then butter in pieces and flour a tablesoon at a time. It's a long time kneading, even 20/30 minutes or more. Add the following ingredient when the previous is well amalgamated. When the dough is like a ball add remaining 50gr. of water little by little.
Leave to rise 12 hours covered with a plastic bag on top in a warm place (on heating tubes, in warmed oven), the dogh should triple.


Second dough
- in the morning

1 kg. first dough
85 gr. Manitoba, strong flour
15 gr. honey
4 gr. salt
30 gr. sugar
3 yolks
30 gr. melted butter but cool
vanilla fragrance

grated orange zest
300 gr. candied orange peels, I use mine

Frosting:
30 gr. hazelnuts
55 gr. blanched almonds
10 gr. pinenuts
225 gr. sugar
white of eggs
30 gr. unpeeled almonds
sugar granes

icing sugar

Start kneading the first dough and add in sequence flour, honey, vanilla, zest, salt, sugar: the following ingredient when the previuos has been amalgamated. When the dough is a ball, add butter drop by drop, then when is all mixed add candied oranges (even minced if you don't like to feel pieces under your teeth). Let it rest in warm place covered for an hour.
Then divide the dough into as many pieces as many doves you will bake. Buttering or flouring your hands would help to manage the dough. Do the same "rollings" as for "Tiny Doves". At the end, lenghten one piece and curl it as "U" and place in the mold for wings, lenghten the other one for the body putting perpendicular. The first time I baked my doves I forgot to do these rollings (and silly me,I forgot to tell my baking mates too!) but they were good as well.
Place molds in the same baking tray that will go in the oven, you won't change place to the molds anymore otherwise the rising might immediately collapse while moving it. Leave to rise just quite to the edges
, it will need 3/4/5 hours: always warm place!


Frosting: mince finely sugar with peeled almond, hazelnuts and pinenuts, then add some white of eggs (about 2, but pour it carefully a little at a time), t should be a thick batter, not too liquid. Spread very gently over rised doves using a sac-à-poche or gently dropping it from a teaspoon. Spread some brown almond on top, some sugar granes, cover with much icing sugar and bake at 190° about 50/55 for kilo molds, 35/40 minutes for 500g.molds, 35 minutes for 120gr. molds. Try with a stick in the middle if cooked, it has to come out dry and not humid.
If they get colored, cover with tin foil. If you bake more doves at the same time, turn them after 30 minutes back/front and up/down if you have 2 trays.

Colomba di Papum

Per i rinfreschi della pasta madre serve:

- Farina manitoba pura
- Farina 00

Se avete la farina Manitoba (farina di forza) del supermercato (tipo LoConte, Spadoni, ecc) usate SOLO quella (quindi NON tenete conto delle percentuali che metterò tra parentesi, valgono SOLO per chi ha una Manitoba pura di molino)

- Acqua
- un pezzo di tela da tappezzeria 30x30, a maglia fitta, forte e resistente, tipo quelle stogge in cretonne da divano, meglio se di colore chiaro (che non ci tinga la nostra pasta madre), il canovaccio non va bene perchè troppo poco resistente
- del cordone da fare pacchetti regalo, lo spago non va bene perchè in fibre naturali che si possono spezzare, meglio qualcosa di sintetico, più resistente
- una pentola piccola per contenere stretto il nostro pacchetto

Il giorno prima dell'impasto


100g di lievito madre
200g di farina di forza (120 manitoba + 80 far. 00)
90g di acqua tiepida

Impastare e lavorare bene per 10 minuti, poi formare un filoncino tozzo.
Infarinarlo e avvolgerlo in una tela molto robusta (non un canovaccio ma una tela da tappezzeria), chiudere saldamente le due estremità e legarlo a mò di salame (non con corda che cederebbe, ma con un nastro sintetico come quello per pacchi regalo). Se possibile, fatevi aiutare da qualcuno a legare stretto stretto il salamotto alle estremità, così non c'è possibilità di fuoriuscita!
Metterlo in un tegame che lo comprima un poco, coprire con il coperchio e lasciare riposare tutta la notte. Utilizzare poi solo un poco della parte più morbida, perchè gran parte dell’impasto si sarà seccato attaccandosi alla tela. La tela si può lavare e riutilizzare.

Questa operazione serve per rinforzare ancora di più la pasta madre che, maturando, sforzerà e cercherà di uscire dal pacchetto. Essendo legata bene, non avrà via di scampo, per cui tutta la forza rimarrà compressa e indurirà il salamotto. Al tatto sarà come toccare un pezzo duro di sasso.
La mattina dopo si aprirà con cautela per poterla riutilizzare. Potrebbe succedere che:
- non si era chiuso con forza il salamotto alle estremità, per cui la p.m. ha avuto una via di scampo, è leggermente uscita e al tatto il salamotto non è durissimo (quello che è successo a me): non importa, l’importante è che sia più gonfio della sera prima, tagliate i nastri ed estraete la p.m. centrale.
- non riuscite a disincastrare il salamotto dalla pentola: non importa, tagliate con cautela i nastri e vedete se riuscite ad aprire la tela, altrimenti, con la punta di una forbice appuntita e tenendo il viso spostato dalla pentola, “accoltellate” con forza il vostro salamotto e riuscirete poi ad estrarre la parte centrale.

N.B.: mano a mano che rinfrescate e avanzate p.m. da questi rinfreschi, non buttate assolutamente gli avanzi, li mettete insieme alla ciotola della vostra p.m. originale, poi domani o domenica si può rinfrescare e fare un bel toscano.

Il giorno dell'impasto - Sabato

Primo rinfresco -ore 8/9:

100g di lievito madre del pacchetto
150g di farina di forza (90 manitoba + 60 farina 00)
75g di acqua tiepida

Impastare e lavorare bene per 10 minuti, formare una palla, incidere a croce e mettere in un luogo caldo per almeno 3 ore e a temperatura ambiente per 1 ora.

Secondo rinfresco - ore 13/14

100g di lievito madre del pacchetto
100g di farina di forza (60 manitoba + 40 farina 00)
60g di acqua tiepida

Impastare e lavorare bene per 10 minuti, formare una palla, incidere a croce e mettere a riposare a temperatura ambiente fino all'uso (però sempre riparata da correnti, con una coperta sopra, al calduccio!).

Ora il nostro lievito è pronto per proseguire con l'impasto della colomba.

Primo Impasto:

135 gr. Pasta madre

390 gr. Farina Manitoba
155 gr. Burro MORBIDO
105 gr. Zucchero*
150 gr. Acqua* appena tiepida
3 Tuorli
50 gr. Acqua

(Sciogliere lo zucchero nei 150g. di acqua)

Spezzettare la p.m. e lavorarla coi tuorli per 5 minuti (nell’impastatore meglio con la frusta a k).
Nel frattempo sciogliere lo zucchero nell’acqua con un cucchiaio. Quindi aggiungere il liquido al composto a filo, sempre a velocità bassa. Poi aggiungere il burro morbido a pezzettini, sempre impastando.
Mettere il gancio impastatore e sempre a velocità bassa aggiungere la farina a cucchiaiate (altrimenti volerà da tutte le parti con una velocìità troppo alta), quando è finita mettere a vel. 2 e continuare a impastare. Quando l’impasto si sarà legato e fatto a palla, aggiungere gli altri 50g. di acqua un cucchiaino per volta, sempre a vel. 2.
Quando tutta l’acqua è stata assorbita e la palla è bella incordata (cioè non c'è impasto attaccato al fondo), lasciare nella ciotola impastatrice se è quella grande da 6 litri, altrimenti trasferire in una grande unta di burro, e mettere a lievitare.
Tutto questo impasto può durare anche 20 minuti buoni.
Coprire con un sacchetto di plastica lasciandolo più alto della ciotola (in modo che l'impasto lievitato non lo riesca a toccare) e mettere al caldo (scaldate il forno a 30 ° per 10 minuti) per 12 ore. La lievitazione, dovrebbe quasi triplicare, eventualmente si può riaccendere un attimino il forno a 30° per qualche minuto e poi lasciare riposare ancora un po’.

Secondo Impasto:

1 kg. circa Primo impasto
85 gr. Farina Manitoba
15 gr. Miele
4 gr. Sale fino
30 gr. Zucchero
3 Tuorli
30 gr. Burro fuso ma non caldo
Aromadi Vaniglia
Scorza d’arancio grattata
300 gr. Canditi di arancio, io uso i miei

Sgonfiare leggermente l’impasto, impastando a vel. 2 aggiungere in ordine dopo che l’ingrediente precedente è stato assorbito:
- la farina
- il miele, la vaniglia, la scorza di arancia grattuggiata
- il sale
- lo zucchero
Quando la pasta è ben legata e ha fatto la palla, aggiungere un tuorlo per volta (il seguente quando quello prima è stato assorbito), poi il burro fuso a filo e in 2/3 riprese (fuso ma non caldo).
Quando tutto è ben impastato, aggiungere i canditi e amalgamare delicatamente e poco.
A chi non piace sentire i pezzi dei canditi si possono tritare, si scioglieranno poi in cottura dando aroma ma non pezzi sotto i denti.
Quindi lasciare riposare coperto al caldo (sempre forno scaldato) per un’ora.
Imburrarsi leggermente le mani e sarà più facile maneggiare l’impasto.
Dividere l'impasto per quante colombe si vogliono fare.
Per ogni pezzo:
- arrotolare
- rimetterlo perpendicolare davanti a noi e arrotolare di nuovo
- dividerlo a metà (ali e corpo).
- arrotolare sia ali che corpo, partendo dalla parte del taglio.
(come nelle colombine)
Allungare le ali, girarle a U e metterle nello stampo. Allungare il corpo e metterlo perpendicolare alle ali. Appoggiare gli stampi in carta sulla teglia che poi andrà in forno, perché lo stampo in carta non si toccherà più, altrimenti l’impasto sgonfierà!
Mettere a lievitare coperte ( anche con pellicola appoggiata ma sempre controllata che non arrivi l’impasto a toccarla!) al caldo fin quasi al raggiungimento del bordo. Si può coprire anche con una ciotola grande, una bacinella di plastica per i panni e aiutarsi con il classsico pentolino di acqua calda che crea umidità e calore, cambiando l’acqua ogni tanto. O vale sempre il forno tiepido.

Glassa:

30 gr. Nocciole tostate
55 gr. Mandorle pelate
10 gr. Pinoli
225 gr. Zucchero
2 Albumi
30 gr. Mandorle amare (armelline), con la buccia
granella di zucchero

Tritare lo zucchero con i pinoli, le nocciole e le mandorle pelate, aggiungere l’albume a cucchiai poco per volta e mescolare con la forchetta (se ne usano due scarsi). Deve rimanere una pappetta densa, altrimenti colerà troppo, quindi piano con l’albume! Controllare sempre prima di aggiungerne altro! Ricoprire delicatamente le colombe usando la sac-à-poche, oppure più semplicemente lasciando cadere la glassa dal cucchiaino (io faccio così).
Aggiungere le mandorle con buccia intere o a pezzetti, la granella di zucchero e una bella spolverata di tanto zucchero a velo.
Infornare a 190° per 50/55 minuti, ventilato o statico secondo le proprie abitudini (io mi trovo meglio col ventilato). A metà cottura, quando si saranno ben alzate, invertire le teglie e girarle davanti/dietro per una cottura uniforme. Se colorano troppo coprirle con alluminio.

Cindy, I will definitely will practice more, maybe my flour was not that strong. I used bread flour, and I am not sure how strong that is. I am very sure that I can get it better next time. I just need to practice. Glad that you give us the recipe too. It was really help a lot.
